So on Rachael's recommendation, I bought Artisan Bread in 5 Minutes A Day and I LOVE IT! It totally works and its really, really good. It is wildly easy to make. You literally mush ingredients together in big, lidded bowl, wait and bake. You get similar results to the No-Knead Bread recipe but with a more flavorful dough. I attribute that to the upped ratios of salt and yeast in the 5 Minute dough. Also, I would recommend scrapping their baking instructions entirely if you are just making a regular loaf, and bake it No-Knead style, in a covered enameled cast-iron dutch oven. You get the same results, but you don't have to fuss about with a broiler pan filled with water, bread stone, peel, etc. etc. To bake No-Knead style, just plop dough into pre-heated (and i mean really freakin' hot) dutch oven and bake covered at 450 for 30 minutes and then uncovered for 15 minutes. Voila!
If you plan on making bread regularly (with their recipes its really, really easy and fast) do what I did and go to a discount store (I'm thinking Marshalls or TJ Maxx) and buy a dutch over that is used only for bread baking. Make sure that the handle on the lid is oven rated to 450 degrees. (If its only rated close to 450, you can usually get away with covering it in foil.) The bread never sticks, so you never have to wash the dutch over. Easy Peasy. Don't believe me? Here's my first loaf:
